Wonderful sides

Creamy Buttermilk Fruit salad

This salad is always at my family partys, and I always hope for leftovers!

2 cups of buttermilk
2 pkg of coconut, lemon or cream cheese flavored instant pudding
2 cans of Mandarin oranges
1 can of mixed canned fruit
1 can of pineapple chucks
(I like to substitute and use fresh fruit like grapes, banannas and strawberries)
2 Bananas
1 Lg. tub of cool whip
sm. marshmellows if wanted

mix buttermilk and pudding together and then stir in fruit. Gently fold in cool whip and chill for at least an hour.


The best mashed potatoes
Add about 1/2 cup of buttermilk to every 7 or 8 potatoes and 2 tbls butter, put cooked potatoes, buttermilk, and butter into your mixer and mix..This is how my mother-in-law makes mashed potatoes and they are the best ever!

If you have not tried these yet they are so good. And this is a good time to use up those leftover tomatoes in the garden that don't have time to rippen before frost!

Fried Green TomatoesMakes: 6 servings Total Time: 20

Ingredients:
2 lb. green tomatoes
4 eggs
1 1/4 cups corn meal
3/4 cup water
1/4 cup minced chives
1 Tbsp. salt
1/4 tsp. pepper, fresh ground
1/4 cup butter or margarine

Preparation Slice the tomatoes 1/2 inch thick, but do not peel or core. Drain well between several thicknesses of paper toweling until most of the moisture of the tomatoes is absorbed.

While the tomatoes are draining, make a batter by beating the eggs until light, then mixing in the corn meal, water, minced chives, salt and pepper.

In a large heavy iron skillet, heat the butter or margarine until bubbly. Dip the tomato slices into batter, and brown quickly on both sides. Serve at once.
